This is why you can stuff your face with a low GI carb (oatmeal), and still have a massive insulin response. There are other ways to negate hi GI foods, like food timing, and meal combinations. Overall we need to try and use moderation. Massive carb cravings can be a sign of hypoglycemia. 60% of hypoglycemics go on to become diabetics. Not that this happens overnight; the human body is extremely tolerant and forgiving, but after years of metabolically stressing your body, mechansms dull down (i.e. your pancreas).
