What's for dinner tonight?

I'm trying to figure out what to make for dinner all week, which is kinda new for me, but I've taken it up as part of my weekday routine, lately (husband is trying to get on a board with a healthier diet, and I'm trying to help by cooking on days that I'm home to do it.)

Does anyone have any special recipes using any of the following?

+Parsnips

+pumpkin

+brussel sprouts

+green beens

+kale

+fresh parsley

+mint

(I have an abundance of the veggies listed because that's what grows best in my garden at this latitude -- I always used to just eat a lot of these raw, but my husband is a lot more particular.  Flavor over function?....whatever  :) )

Post anything you've got! (even if its not on the list)

I make a soup with Kale.

Google  Olive garden Kale soup recipe.

Stir fry Kale in olive oil,  little butter with onion,  garlic,  flavored sausage.

Williams Sonoma has a great Brussel sprouts recipe.

Or steam until done,  add butter and brown.

Pumpkin cook like a butternut squash, or yam, mix with butter and brown sugar.

Fall Veggies are Fabulous food and great for us.

Great ingredients for a yummy stir fry.  Add ginger and garlic and you're off to the races!  Enjoy.  So jealous you can grow all that in your back garden.

Just sprinkle chicken breasts with lots of rosemary, and/or whatever other spices you like. I usually use garlic powder, onion powder, thyme, and paprika. Then squirt Lemon juice in a shallow baking dish, 30 Min at 350.

Sounds like some wonderful chicken, that thyme is a little known secret for flavoring meat. I use it with cumin, onion powder and charbroil it for a dry rub on my steaks. Which is what I had for dinner tonight cooked over charcoal. mmm  Blows any resturant away.

Tonight we're having homemade pork fried rice, and sweet and sour chicken! Everything from scratch. I am fortunate as my partner is a great cook. Not as good as I but pretty darn close!  :smitten:
